ALMOND COOKIES

  • ½ pound butter
  • 1 cup sugar
  • 1 egg yolk
  • ¼ teaspoon cinnamon
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • ¼ pound chopped almonds
  • 1 egg white, beaten lightly with fork
Cream together butter and sugar. Add egg yolk, cinnamon, flour, salt, and one-half of the almonds. Divide dough into two parts. Pat into two greased 8-inch-square cake pans. Brush unbeaten egg white over each pan. Cover with remaining almonds. Bake in 350° oven for 30 minutes. Cool. Cut into squares, and remove from pan.
