BREAD PUDDING

  • 2 cups dried bread crumbs
  • 1 quart milk
  • 2 egg yolks, beaten
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 tablespoons butter
  • 2 egg whites, stiffly beaten
  • 1 teaspoon grated lemon rind
  • 1 teaspoon grated orange rind
  • ½ teaspoon vanilla
  • ½ cup raisins
  • 1 large apple, cut into thin, fine slices
Dry bread and roll into crumbs. Heat milk and pour over bread crumbs. Add egg yolks, brown and white sugar, butter, lemon and orange rind, vanilla, raisins, and apple. Add to bread mixture. Fold in stiffly beaten egg whites. Pour into a well-buttered 1½ quart casserole dish, and bake in a pan of water at 350° F. for 1 hour or more until set. Serves 6.
