BUTTERSCOTCH COOKIES

  • 1 cup butter
  • 2 cups brown sugar
  • 2 eggs, beaten
  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 cups coarsely chopped pecans
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
Heat butter and sugar until dissolved. Cool. Add eggs, blend, and sift in combined flour and baking powder. Mix well. Add remaining ingredients. Spread and bake on a cookie sheet at 350° for about 15 minutes. Cut in squares while hot.
