BUTTERSCOTCH PUDDING

  • 1 1/2 cups brown sugar
  • 3 tablespoons butter
  • 1 3/4 cups scalded milk
  • 3 egg yolks
  • 1/2 cup cold milk
  • 6 tablespoons flour
  • 1/8 teaspoon salt
  • Whipped cream
Dissolve the brown sugar and butter in the scalded milk. Combine slightly beaten egg yolks with the cold milk. Mix with flour and salt. Add first milk mixture. Pour in a greased pan. Cover and steam at 325° F. for 45 minutes. Serve with whipped cream. Serves 6.
