| CHEESE PIE |

- 9-inch pie crust
- 1 cup cottage cheese
- 1 cup seedless raisins, sliced
- ½ cup corn syrup
- 2 tablespoons butter

- 2 tablespoons cream
- 2 beaten eggs
- Juice of 1 lemon
- 1 grated lemon rind

Rub cheese through a coarse sieve and mix thoroughly with raisins,
syrup, butter, cream, eggs, and lemon juice and rind. Line a
pie pan with pie crust. Turn in mixture. Bake at 425° F.
for 10 minutes. Reduce heat and continue baking at 325° F.
until firm. Shredded coconut may be substituted for raisins.
Honey or granulated sugar may be used in place of corn syrup.
If neither raisins nor coconut are used in filling, jelly, jam,
or preserves may be spread on top after baking. |
