CRUMB CAKE

  • ½ cup shortening
  • 1½ cups brown sugar
  • 2½ cups sifted flour
  • 2½ teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 beaten egg
  • ¾ cup milk
Mix shortening, sugar, and 2 cups flour to a fine crumb. Reserve ¾ cup of this crumb. Sift remaining flour, baking powder, cinnamon, and salt. Combine with crumb mixture. Add egg and milk and mix well. Pour into an 8-inch square pan which has been lined with oiled paper. Sprinkle reserved crumbs on top. Bake at 375° F. 35 to 40 minutes.
