GINGERBREAD SHORTCAKE

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ginger
  • 2 teaspoons cinnamon
  • 1/3 cup shortening
  • 1/2 cup buttermilk
  • 1 egg
  • 1 cup molasses
  • 1 cup heavy cream
Sift together the dry ingredients. Heat to boiling the molasses and shortening. Add the milk and egg to the dry ingredients and stir quickly into the hot molasses mixture. Bake at 375° F. for 20 to 25 minutes, in two greased 8-inch layer pans. Cool and cover with whipped cream to serve.
