- 2 egg-yolks, hard-cooked
- ¾ teaspoon salt
- ½ teaspoon powdered sugar
- ¼ teaspoon paprika
- Few grains cayenne
- Few grains white pepper
- 1 tablespoon lemon juice
- 2 tablespoons vinegar

- ½ cup olive oil
- 1 tablespoon red pepper, finely
chopped
- 1 tablespoon green pepper, finely
chopped
- 1 tablespoon pickled beets,
cut in small cubes
- 1 teaspoon finely chopped parsley

Force egg yolks through a strainer and add salt, sugar, paprika,
cayenne, white pepper, lemon juice, vinegar and olive oil. Shake
thoroughly and add remaining ingredients. |
