JAM COOKIES

  • ½ cup butter
  • ¼ cup sifted brown sugar
  • 1 egg, separated
  • 1 cup sifted all-purpose flour
  • 1 cup chopped nuts
  • Raspberry jam
Cream butter and sugar until light. Mix in egg yolk. Add flour and form small balls of the batter. Dip into egg white, then nuts. Place on cookie sheet; make depression in center of each cookie. Bake at 300° for 8 minutes. Press center again and continue baking an additional 10 minutes. Cool slightly. Remove from sheet and fill centers with jam.
