| LIMA BEAN SOUP |

- 2½ cups boiled lima beans
- 2 cups milk
- 1 slice onion, chopped
- 3 slices carrot, chopped

- 3 tablespoons butter
- 2 tablespoons flour
- 1½ teaspoons salt
- ¼ teaspoon pepper
|

|
Simmer beans pre-boiled lima beans (already tender) 20 minutes
in 2 cups water. Rub through sieve. Add milk. Sauté onion
and carrot 5 minutes in butter. Strain, discarding vegetables.
Blend flour in butter. Add salt and pepper. Stir into hot soup.
Serves 6. |
