LIMA BEAN SOUP

  • 2½ cups boiled lima beans
  • 2 cups milk
  • 1 slice onion, chopped
  • 3 slices carrot, chopped
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 1½ teaspoons salt
  • ¼ teaspoon pepper
Simmer beans pre-boiled lima beans (already tender) 20 minutes in 2 cups water. Rub through sieve. Add milk. Sauté onion and carrot 5 minutes in butter. Strain, discarding vegetables. Blend flour in butter. Add salt and pepper. Stir into hot soup. Serves 6.
