MOCK OYSTER SOUP

  • 12 roots oyster or salsify plants
  • 1 quart milk
  • 2 tablespoons butter
  • Salt--Pepper
Scrape roots. Cut in thin slices. Cover with water. Simmer until tender. Add milk and butter. Season to taste with salt and pepper. Bring to boil and serve hot. Serves 6.
