- ¼ pound butter
- ¼ cup sugar
- 1 egg yolk
- 1 tablespoon grated orange rind
- 1 teaspoon grated lemon rind

- 1 tablespoon lemon juice
- 1 teaspoon vanilla
- 1 cup sifted cake flour
- 1 egg white, slightly beaten
- ¾ cup finely chopped
nuts

Cream butter; add sugar gradually, and cream until the mixture
is light and fluffy. Add egg yolk and orange and lemon rinds,
lemon juice, and vanilla; mix thoroughly. Blend in flour; chill
thoroughly. Form into ½ inch balls and roll first in the
slightly beaten egg white, then in the chopped nuts. Place on
a greased cookie sheet and bake at 375° for 15 minutes, or
until lightly browned. |
