NUT BALL COOKIES

  • ¼ pound butter
  • ¼ cup sugar
  • 1 egg yolk
  • 1 tablespoon grated orange rind
  • 1 teaspoon grated lemon rind
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 1 cup sifted cake flour
  • 1 egg white, slightly beaten
  • ¾ cup finely chopped nuts
Cream butter; add sugar gradually, and cream until the mixture is light and fluffy. Add egg yolk and orange and lemon rinds, lemon juice, and vanilla; mix thoroughly. Blend in flour; chill thoroughly. Form into ½ inch balls and roll first in the slightly beaten egg white, then in the chopped nuts. Place on a greased cookie sheet and bake at 375° for 15 minutes, or until lightly browned.
