PINEAPPLE PIE

  • 9-inch pie crust
  • 1/2 cup flour
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 2/3 cup pineapple juice
  • 1 cup hot water
  • 1 tablespoon shortening
  • 3 egg yolks, beaten
  • 2 cups canned pineapple, cut in small pieces
  • 3 tablespoons confectioners' sugar
  • 3 egg whites
Mix flour, sugar, and salt together. Add the pineapple juice and water and bring slowly to the boiling point, stirring constantly. Cook 15 minutes over hot water. Remove from fire, add shortening and well-drained pineapple. Pour this mixture on the yolks and mix well. Pour the filling into pie shell. Cover with a meringue made by beating the confectioners sugar into the stiffly beaten egg whites. Bake at 325° F. 15 minutes or until delicate brown.
