RICE PUDDING

  • 1 cup rice
  • 1 teaspoon salt
  • 4 cups milk
  • 1 ½ cups sugar
  • 2 eggs, slightly beaten
  • 1 teaspoon vanilla
  • 1 cup whipped cream, if desired
Wash rice. Cover with water and bring to a boil. Add salt. Heat milk and pour over the boiling rice, very slowly, while stirring. Cook 20 minutes, stirring frequently. Remove from heat and add sugar. Cook about 30 minutes or until creamy. Remove from heat and slowly stir in eggs and vanilla. Pour into 9" x 12" oblong casserole dish. Chill. Stir the pudding as it is served, and add whipped cream, if desired.
