SPLIT PEA SOUP

  • 1 1/2 cups dried split peas
  • 3 quarts water
  • Ham bone
  • 1 onion, sliced
  • 2 cups scalded milk
  • 2 tablespoons butter
  • 1/8 teaspoon pepper
Wash and pick over peas and soak over night. Drain. Add water, ham bone and onion. Cover and cook slowly 3 hours or until peas are soft. Press through a sieve. Add milk, butter, and pepper and heat thoroughly. Serves 6.
