| SPLIT PEA SOUP |

- 1 1/2 cups dried split peas
- 3 quarts water
- Ham bone
- 1 onion, sliced
|
- 2 cups scalded milk
- 2 tablespoons butter
- 1/8 teaspoon pepper
|
|
|
Wash and pick over peas and soak over night. Drain. Add water,
ham bone and onion. Cover and cook slowly 3 hours or until peas
are soft. Press through a sieve. Add milk, butter, and pepper
and heat thoroughly. Serves 6. |
